Why would that emotion survive in our genes? How does appreciating the glow of sunlight on a mountaintop contribute to the survival of our species?
As a mystic, I believe that the appreciation of Beauty is simply our Soul resonating with our last memory of God Herself—when we were one with Her, but, because of a desire for something more, we were torn from Her. From Fading Toward Enlightenment:

The feel of Beauty is the feel of love. To the mystic, catching a glimpse of Beauty is like being struck by the memory of a distant soulmate—of a long lost love.
How can you learn to see God? Just learn to see the Beauty in anything.
